- .75 pound live littleneck clams, rinsed
- 3 ounces of evaporated milk
- 1/3 cup Clam Juice (seafood stock)
- chopped clove of garlic
- 1/4 cups of
- celery
- bell pepper
- red onion
- diced bacon slice
- diced roasted seaweed as a garnish
Steps
- In an MSR Alpine 2Liter pot, add bacon; stir until crispy. Remove bacon and set aside.
- Sauté vegetables until fragrant about 2 to 3 minutes.
- Add evaporated milk and Clam Juice to the pot with low heat
- Stir 2 minutes then and clams. cook 6–8 minutes until clams open and the liquid reduces and thickens into a cream.
- Discard clams that remain closed after cooking.
- Serve with bacon and roasted seaweed garnish or a sliced crispy baguette
