🦪Littleneck Clams in Bacon-Cream sauce

  • .75 pound live littleneck clams, rinsed
  • 3 ounces of evaporated milk
  • 1/3 cup Clam Juice (seafood stock)
  • chopped clove of garlic
  • 1/4 cups of
    • celery
    • bell pepper
    • red onion
  • diced bacon slice
  • diced roasted seaweed as a garnish

Steps

  • In an MSR Alpine 2Liter pot, add bacon; stir until crispy. Remove bacon and set aside.
  • Sauté vegetables until fragrant about 2 to 3 minutes.
  • Add evaporated milk and Clam Juice to the pot with low heat
  • Stir 2 minutes then and clams. cook 6–8 minutes until clams open and the liquid reduces and thickens into a cream.
  • Discard clams that remain closed after cooking.
  • Serve with bacon and roasted seaweed garnish or a sliced crispy baguette
