The recipe for our Dutch Oven Cornbread Reuben is easy, and satisfying for four hungry adults.
you will need the following:
- 31 charcoal briquetts (21 on the lid + 10 under the Dutch Oven)
- 12 inch Dutch Oven
- 2 tbs oil
- 2 cups cornmeal & 2 tbs of cornmeal
- 1 egg
- 1 cup buttermilk
- 1/2 pound thin sliced corned beef
- 1 can sauerkraut (drained)
- 1 package of sliced swiss cheese
- bottle of Thousand Island Dressing
Make the mix:
- mixing bowl and whisk
- whip the egg and buttermilk then combine 2 cups of cornmeal
preheat the Dutch Oven to 425’F
- add the oil to the interior of the preheated Dutch Oven
- add 2 tbs of cornmeal and brown it
- add half of the mixture to the Dutch Oven
- then layer:
- corned beef
- sauerkraut
- swiss cheese
- Thousand Island Dressing
- finish with the rest of the cornbread mixture
bake for 45 minutes and enjoy
