Dutch Oven Cornbread Reuben

The recipe for our Dutch Oven Cornbread Reuben is easy, and satisfying for four hungry adults.

you will need the following:

  • 31 charcoal briquetts (21 on the lid + 10 under the Dutch Oven)
  • 12 inch Dutch Oven
  • 2 tbs oil
  • 2 cups cornmeal & 2 tbs of cornmeal
  • 1 egg
  • 1 cup buttermilk
  • 1/2 pound thin sliced corned beef
  • 1 can sauerkraut (drained)
  • 1 package of sliced swiss cheese
  • bottle of Thousand Island Dressing

Make the mix:

  • mixing bowl and whisk
  • whip the egg and buttermilk then combine 2 cups of cornmeal

preheat the Dutch Oven to 425’F

  • add the oil to the interior of the preheated Dutch Oven
  • add 2 tbs of cornmeal and brown it
  • add half of the mixture to the Dutch Oven
  • then layer:
    • corned beef
    • sauerkraut
    • swiss cheese
    • Thousand Island Dressing
  • finish with the rest of the cornbread mixture

bake for 45 minutes and enjoy
